meal planning

So our meal planning has been going pretty well.  Here's our plan for the week:
Meatless Monday - Tortellini Soup
Tuesday - Spinach and Artichoke stuffed Mushrooms
Wednesday - Max's request: Ham & Swiss roll-ups
Thursday - Corn Fritters with a green salad
Friday - Spinach and Orzo Soup
Saturday - Asian Cabbage Slaw with grilled chicken skewers
Sunday - Parmesean Chicken with roasted green beans & mushrooms

first week in the books....

So we have our first week of adjusting our diet in the books...it was easier than i thought even though we didn't follow the menu to a t.  I have too much of a go with the flow (what?) personality, or maybe it's a what-so-ever-things-are-flexible personality...either way, one night last week we were supposed to have bean burritos and that didn't happen.  I was just not in a burrito mood....luckily we have a pretty stocked pantry, so I pulled something else together pretty quickly and it was tasty....and that's what counts right?

So this week, it's a little hectic.  Max and Katie are back to school (finally? did I just say that?), and I'm working two full days, Chris has a booked schedule, so I'm going to have to be pretty thoughtful with our menu planning.

Sunday - Wiggles Soup - pulled from our freezer - it's a veggie soup that Max actually likes.  There is some ground beef in the soup, so this will be our first meaty-meat in over a week.

Monday - I'm picking up a Pi Phi LDC right at dinner time to deliver her to Butler...so I'll be eating a 'snacky' dinner - apple with PB, carrots, almonds and likely a Soy Chai from 'bucks.  The family's having a Kashi frozen margharita pizza and fruit salad.
Tuesday - Chicken & Spicy Bean Burritos from Annie's Eats (Love her recipies!)
Wednesday - Need some ideas - something quick and easy or a crockpot recipe.
Thursday - Sundried tomato and fontina rissoto with roasted broccoli (pinterest recipies)
Friday -
Saturday- Mushroom Casserole and big green salad

Things I've noticed - if I keep up with my h2o consumption, I feel great - otherwise I wanna snack.  I'm not missing meat much...except for today and I really want a Boogie Burger.

Menu Plan: Week of 1/2/12

Monday - Tortellini Soup from Annie's Eats
Tuesday - Corncakes with green salad (yes, I know that this is more of a summer dish with fresh corn, but we're going to give it a shot with defrosted frozen corn...if it flops, peanut butter sandwiches!)
Wednesday - Spinach and sausage with whole wheat rotini (recipe use to be heavy on the sausage, light on the spinach - so we're going to flip that ratio)
Thursday - bean burritos with avocado and tomato salad
Friday - Chris and I are going out - kids are going to Nana's so they'll probably have fish sticks or pizza
Saturday - Spinach and artichoke stuffed portabello mushrooms

I'll come back with notes on the meals and hopefully links to the recipes.

Dusting off the cobwebs...

It's been a really long time since I touched this blog.  Like many people, we're treating the new year as a way to make some changes in our lives - hopefully healthy changes!

The other night, we watched "Forks over Knives" based on several recommendations received from friends.  I have to admit, I snoozed off and on during the entire documentary, but when I woke up the next morning, Chris was all fired up about our diet and the changes he feels we need to make based on the movie.  My milk-drinking, burger-loving, let's-put-some-cheese-on-top-of-that husband was suggesting we go Vegan RIGHT NOW!  I had to 'Whoa Nelly!' him a bit, and we've compromised to take some steps toward breaking our 'addiction' to especially dairy and meat.  I've been especially proud of how well Max has jumped on board, trying new foods and being excited about being a healthier family.

Last night, we had our first "Meatless Monday" dinner ... Tortellini Soup from Annie's Eats.  It was well received and I just reheated a bowl for lunch today!  I think next time we'll add some beans to pack in some protein, but it was a delicious and quick soup.

We'll see how this goes...I'm cautiously optimistic and excited about the changes ahead of us...we do have a freezer full of meat and poultry that I don't want to just toss.  I'm excited about exploring some vegetarian cookbooks, and thanks to Pinterest, I have lots of recipes pinned already! 

I've got lots of questions - Soy or Almond milk? What about cheese, butter and yogurt?  Do we try some of those 'fake-meat' alternatives or just say no to sausage/bacon/hotdogs in general?  My head is just spinning...I wonder if there's a class I can take?  Anyone have any recommendations?

Monday: Grilled ham and cheese with creamy tomato soup
Tuesday: Roasted chicken tacos
Wednesday: Some kind of meat on the grill, sweet potato fries and asparagus
Thursday: Chicken Pesto Pizza
Friday: leftovers with salad
Saturday: Grilled chicken satay with peanut sauce and Pioneer Woman's Most Favorite Salad Ever

Let me know if you want any of these recipes...I'm too lazy to type them all out today.

Pesto Chicken Pizza

1 Boboli Pizza Crust (we prefer "Thin")
1 pre-cooked chicken breast, sliced (I pull it off of a whole roasted chicken)
Some Mushrooms, sliced
Some Onion, sliced
Some Pesto (either home-made or store-bought)
A lot of yummy cheese (mix of mozz, parm, fontina, etc...whatever you have!)

Spread the pesto on the piazza crust. Top with chicken, sliced mushrooms and onion. Cover with cheese. Bake according to Boboli pizza crust instructions.

spinach and mushroom lasagna

easy-peasy...

1 box lasagna noodles
1 jar marinara sauce
1 box frozen spinach (thawed and all water drained out)
8 baby bella mushrooms
15 oz. ricotta cheese
3 cups mozz/parm mix (shredded)

Cook lasagna according to package instructions.

In a small bowl, mix ricotta and spinach.

pour 1/3 of the pasta sauce in the bottom of 9x13 baking dish.

place 3 lasagna noodles side by side in pan.

spread 1/3 of ricotta/spinach mix over noodles. sprinkle with cheese. add 3 more noodles, and cover with pasta sauce. follow 2-3 more times. Finish with moxx/parm shredded cheese.

Bake at 350 for about an hour.
